Rosemary Cauliflower Gnocchi
I get it. Everyone knows the wonders of Trader Joe’s frozen cauliflower gnocchi. But it’s for GOOD REASON. This stuff is FIRE and definitely worth trying if you haven’t done so yet (which, if you haven’t, where exactly have you been??)
After searching many a blog and instagram account for the perfect cauliflower gnocchi recipe, I discovered that the best cooking option is to ignore the packaging altogether and cook it right from the freezer. This of course makes my hangry-self very very happy. I’m not too fond of waiting for things to defrost while I stare and salivate very intensely as the minutes go by.
How can I use cauliflower gnocchi?
This cauliflower gnocchi recipe is the perfect side dish for meat (think: steak and potatoes) or when you have company over. It also works as a sub for pasta, which you can add some sauce and protein to for a complete meal.
Rosemary Cauliflower Gnocchi (GF, DF, NF)
Instructions:
1 Bag TJ’s Cauliflower gnocchi (in the frozen section)
1 Tbsp Coconut oil
Fresh rosemary, salt, pepper and garlic powder
Optional add-ins: Spinach, kale or other greens
What to do:
Heat up a skillet over medium-high heat. Add the coconut oil and heat until melted.
Add the frozen cauliflower gnocchi. Cook until the bottom turns crispy brown, then flip each piece individually.
Add your seasonings toward the end of cooking so they don’t burn. If you’re adding in greens, throw those in at this point as well.
Cook until the underside becomes crispy brown and your greens are wilted (if using).
Tips:
You can also cook TJ’s Cauliflower gnocchi straight from the freezer in your air fryer. (You know I LOVE an easy air fryer recipe). You can use spray oil on the gnocchi and follow the same cooking instructions as listed above (adding in the seasonings toward the end).
