Crispy Rice Treats
I truly believe homemade Rice Krispies Treats are the ULTIMATE comfort food. They have the perfect combo of satisfaction, childhood memories, and the miraculous ability to remove all stress from the day (kind of…). I mean just look at that ooey gooey marshmallow goodness stretching across all those little crunchy crispies! This recipe is SO simple to make, and follows the OG protocol with a few ingredient substitutions (totally optional - see below for subs you can make for the same result!).
The old-school version has Rice Krispies cereal, butter and marshmallows - super simple. This recipe uses One Degree Organics Sprouted Brown Rice Crisps cereal, coconut oil, and Dandies vegan marshmallows. Marshmallows are actually already dairy-free, but they usually use gelatin for that binding capability. Since gelatin is an animal product, it is not considered vegan but there are marshmallow brands like Dandies who use other ingredients in place of the gelatin. One is not necessarily better than the other, it just depends what you prefer!
Crispy Rice Treats (GF, DF, NF)
Ingredients:
5 cups Sprouted brown rice crisps cereal*
1/4 cup Coconut oil**
1 bag (10oz) Dandies marshmallows (or regular if not vegan)
What to do:
Melt coconut oil in a saucepan over low heat.
Add the marshmallows until softened and slightly melted.
Carefully mix in the cereal with a rubber spatula. Try to be gentle to prevent crushing all the cereal into crumbs (crushing some of it is okay, you just don’t want to annihilate the whole thing into a bowl of powder)
Grease a 13x9 pan (I use spray oil here) and transfer mixture to the pan. Press it into the pan with a spatula so the top becomes flat and it’s spread into all 4 corners.
Let it cool, then slice into squares and hide it from your family because they will eat the whole batch in 3 minutes.
Substitutions:
*Cereal - You can really substitute ANY cereal in here. I’ve used Corn Flakes, Fiber cereal, Cheerios, Chex, you name it. As long as you have that sticky, binding marshmallow you’re good to go.
**Coconut oil - This makes it dairy-free, but if that isn’t a factor for you, then you can substitute ghee or butter in here. The key is that you use a saturated fat (solid at room temperature) so that it solidifies while cooling to hold everything together.
