Breakfast Quesadilla

 

If anyone knows who invented the breakfast quesadilla, please let me know so I can properly thank them with all my heart. This little pocket of perfection takes 5 minutes to make and provides you with a good 3-4 hours of satisfaction.

Breakfast Quesadilla (GF, DF)

Ingredients:

What to do:

  1. Spray a small-medium pan with oil (you want one about the size of the tortilla you’re using) and heat over medium-high heat

  2. Crack eggs into pan and scramble with a rubber spatula

  3. Let it cook halfway and then lay the tortilla on top. (The eggs will cook into the tortilla and stick together). Wait until the eggs are almost done cooking and flip the entire pancake-like mixture upside down. (You can see if it’s almost done by tilting up the side with the spatula to make sure there’s no more liquid).

  4. Now that the tortilla is on the pan and the eggs are on top, add avocado and salsa/hot sauce to the middle. Fold the tortilla in half, locking the fillings inside.

  5. * Paired with roasted carrots and tahini with everything bagel seasoning

Tips:

You can also coat the tortilla with some dairy-free cream cheese like Kite Hill before placing over the eggs, which will help it stick even more.
